Step 1 – Prep the Oven & Chicken
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment or lightly grease it.
- Pat chicken breasts dry. Using a sharp knife, cut a pocket horizontally into each breast, stopping ¾ of the way through.
Step 2 – Make the Filling
- In a mixing bowl, combine cream cheese, cheddar, bacon, garlic powder, onion powder, salt, and pepper. Mix until smooth.
- Spoon or pipe the filling into each chicken pocket. Press edges gently to seal.
Step 3 – Coat with Doritos
- Set up three dishes: flour, beaten eggs, crushed Doritos.
- Dredge each stuffed chicken breast in flour → dip in eggs → press firmly into Doritos until coated evenly.
Step 4 – Bake to Perfection
- Place coated breasts on the baking sheet, leaving space around each.
- Bake 25–30 minutes, until chicken is cooked through (165°F internal) and Doritos are golden and crispy.
- Let rest for 5 minutes before slicing open—watch that cheesy river flow!

- Buffalo Ranch Twist: Mix buffalo sauce into the cheese blend, coat with Cool Ranch chips.
