Add diced onion and bell pepper to the skillet. Cook 3–4 minutes until softened. Stir in taco seasoning, diced tomatoes, and salsa. Let simmer 5 minutes to blend flavors.
Step 4 – Combine Pasta and Meat
Add the cooked spaghetti to the skillet and toss until evenly coated with the taco meat mixture.
Step 5 – Make it Cheesy and Creamy
Stir in sour cream. Sprinkle cheddar and mozzarella evenly over the top. Cover and cook 2–3 minutes until cheese melts.
Step 6 – Serve and Garnish
Top with chopped green onions or cilantro if desired. Serve immediately while hot.
