Step 1: Prepare the Oven and Pans
Preheat your oven to 350°F (175°C).
Grease two 9×5-inch loaf pans thoroughly.
For easier removal, you can also line the pans with parchment paper, leaving a little extra parchment extending over the sides.
This creates convenient handles for lifting the cooled loaves from the pans.
Step 2: Prepare the Blueberries
Place the blueberries in a bowl.
Add the reserved 2 tablespoons of flour and gently toss until the berries are lightly coated.
Set them aside while you prepare the batter.
Step 3: Cream the Butter and Cream Cheese
Place the softened butter and cream cheese in a large mixing bowl.
Beat with an electric mixer until smooth and creamy.
This is an important step because properly combining the butter and cream cheese creates the foundation for a tender loaf.
Scrape down the sides of the bowl as needed.
Step 4: Add Sugar and Vanilla
Add the granulated sugar and vanilla extract.
Continue beating until everything is thoroughly combined and the mixture looks smooth and creamy.
Don't rush this step.
A well-mixed butter, cream cheese, and sugar base helps create a more consistent finished texture.
Step 5: Add the Eggs
Add the eggs one at a time.
Mix well after each addition before adding the next egg.
Adding them gradually makes it easier for the eggs to incorporate evenly into the butter and cream cheese mixture.
Scrape down the sides and bottom of the bowl occasionally.
Step 6: Combine the Dry Ingredients
In a separate bowl, whisk together:
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
Mix until evenly combined.
Step 7: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the cream cheese mixture.
Mix only until the flour disappears into the batter.
Once flour has been added, avoid excessive mixing. Overmixing can encourage too much gluten development and make quick breads denser or tougher.
Step 8: Fold in the Blueberries
Add the flour-coated blueberries.
Using a rubber spatula, gently fold them through the batter.
Try not to crush the berries.
Continue only until they are reasonably distributed throughout the mixture.
Step 9: Fill the Loaf Pans
Divide the batter evenly between the two prepared 9×5-inch loaf pans.
Smooth the tops gently with a spatula.
Try to make the amount of batter in each pan roughly equal so both loaves bake at a similar rate.
Step 10: Bake
Place the pans in the preheated oven.
Bake at 350°F for approximately 45–55 minutes, or until the loaves are golden and a toothpick inserted near the center comes out clean or with only a few moist crumbs.
Baking times can vary depending on your oven and loaf pans, so begin checking toward the lower end of the baking range.
If the tops are becoming too dark while the centers still need additional baking, loosely tent the pans with aluminum foil.
Step 11: Cool
Remove the loaves from the oven and place the pans on a wire rack.
Allow them to cool in their pans for about 10–15 minutes.
Carefully run a thin knife around the edges if necessary, then remove the loaves and transfer them to the rack.
Let them cool before slicing.
Although a warm slice can be tempting, cooling gives the crumb time to set and makes the loaf easier to cut cleanly.
