1. Prepare the Beans
Rinse the dried beans carefully and remove any damaged pieces.
For the best texture, soak the beans overnight in water, then drain and rinse before cooking.
2. Add Ingredients to the Slow Cooker
Place the beans into the crockpot.
Add:
- Diced ham
- Ham bone (if using)
- Onion
- Carrots
- Celery
- Garlic
- Thyme
- Bay leaves
- Black pepper
Pour the chicken broth over everything until the ingredients are covered.
3. Slow Cook Until Tender
Cover and cook:
- Low heat: 7–8 hours
- High heat: 4–5 hours
Cook until the beans become tender and the flavors have developed. Slow cooking is what gives this soup its deep, comforting taste.
4. Finish the Soup
Remove the ham bone and bay leaves.
If there is meat left on the bone, remove it, shred it, and return it to the soup.
Taste and adjust the seasoning if needed.
For a thicker soup, mash some of the beans with a spoon and stir them back into the broth.
