Ingredients:
- 3 cups whole wheat flour (or 1.5 cups whole wheat + 1.5 cups oat flour for lighter texture)
- 1 cup warm water
- 2 tablespoons extra virgin olive oil
- 1 teaspoon instant yeast
- 1 teaspoon salt
- Optional herbs or seeds: rosemary, thyme, flax seeds, chia seeds
Instructions:
- Activate the yeast:
- Mix the yeast in warm water and let it sit for 5–10 minutes until bubbly.
- Mix the dough:
- In a large bowl, combine the flour, salt, and any dried herbs or seeds.
- Gradually add the olive oil and yeast mixture. Knead until smooth and elastic.
- First rise:
- Cover the dough with a clean cloth and let it rise in a warm place for about 1 hour, until doubled in size.
- Shape the dough:
- Lightly knead to release air, then shape into a loaf or round shape.
- Place on parchment paper and brush with a little olive oil. Sprinkle herbs or seeds on top if desired.
- Second rise (optional):
- Let the dough rest 15–20 minutes before baking.
- Bake:
- Preheat oven to 400°F (200°C).
- Bake for 25–30 minutes until golden brown and hollow-sounding when tapped.
- Cool:
- Let the bread cool on a wire rack before slicing.
