Step 1: Toast the Pecans
Preheat your oven to 350°F (175°C).
Spread the pecan halves in a single layer on a baking sheet.
Toast for approximately 8–10 minutes, watching them carefully toward the end.
They should smell fragrant and look lightly toasted rather than dark brown.
Remove the pan from the oven and allow the pecans to cool.
Step 2: Prepare Your Baking Sheet
Line a large baking sheet with parchment paper or a silicone baking mat.
This is important because warm caramel is extremely sticky.
The nonstick surface will make removing the finished candies much easier.
Step 3: Arrange the Pecans
Arrange the cooled pecans into small clusters.

Step 6: Melt the Chocolate
Place the semi-sweet chocolate in a clean microwave-safe bowl.
Microwave in 20–30 second intervals, stirring well between each interval.
Stop heating once the chocolate is almost completely melted.
Continue stirring and the remaining small pieces should melt from the residual heat.
This helps reduce the chance of overheating the chocolate.
Alternatively, melt the chocolate gently in a double boiler.
Step 7: Add the Chocolate
Spoon melted chocolate over the caramel center of each turtle.
You can completely cover the caramel or leave a little caramel visible around the edges.
Allow some of the pecans to remain exposed so the candies keep their classic turtle-like appearance.
Step 8: Add Optional Sea Salt
If you enjoy sweet-and-salty desserts, sprinkle a tiny amount of flaky sea salt over the chocolate while it's still wet.
You don't need much.
Just a few flakes can balance the sweetness of the caramel and chocolate.
Step 9: Let the Turtle Candies Set
Leave the candies at room temperature until the chocolate and caramel are completely set.
For faster results, place the baking sheet in the refrigerator briefly.
Once firm, carefully lift each turtle from the parchment paper.
They're ready to serve.
Why Toasting the Pecans Makes a Difference
You could technically make these candies with untoasted pecans, but toasting them gives the finished dessert noticeably more flavor.
The heat intensifies their natural nutty aroma while adding extra crunch.
Because this recipe contains only three main ingredients, improving one ingredient makes a noticeable difference in the final candy.
Just keep an eye on the oven.
Nuts can go from perfectly toasted to overdone fairly quickly.
