Unlock a Beloved Mexican Tradition: Authentic Capirotada (Mexican Bread Pudding)

For the Piloncillo Syrup

  • 2 piloncillo cones (about 16 ounces total)
  • 4 cups water
  • 2 cinnamon sticks
  • 4 whole cloves
  • 1 star anise (optional)
  • 1 strip orange peel (optional)

Substitute

If piloncillo isn't available, dark brown sugar can be used for a similar caramel flavor.

For the Bread Pudding

  • 1 loaf day-old French bread or bolillo bread
  • ½ cup butter
  • 2 cups shredded Monterey Jack, queso fresco, or asadero cheese
  • 1 cup raisins
  • 1 cup chopped pecans or walnuts
  • 1 cup shredded coconut (optional)
  • 1 banana, sliced (optional)
  • ½ cup chopped peanuts for topping

Step 1 – Prepare the Syrup

In a medium saucepan, combine the piloncillo, water, cinnamon sticks, cloves, star anise, and orange peel.

Bring everything to a gentle boil, then reduce the heat and simmer for about 20 to 25 minutes until the syrup becomes fragrant and slightly thickened.

Remove the whole spices before using.

Step 2 – Toast the Bread

Slice the bread into ½-inch thick pieces.

Melt the butter in a large skillet over medium heat and toast each slice until both sides are golden brown.

This important step helps the bread hold its shape after absorbing the syrup.

Step 3 – Build the Layers

Lightly grease a baking dish.

Arrange one layer of toasted bread.

Sprinkle with:

  • Cheese
  • Raisins
  • Pecans or walnuts
  • Coconut (if using)

Repeat the layers until all ingredients have been used, finishing with cheese and nuts on top.

Step 4 – Add the Syrup

Slowly pour the warm piloncillo syrup evenly over the entire baking dish.

Gently press the bread with a spatula to help it absorb the liquid.

Allow the mixture to rest for about 30 minutes before baking.

Step 5 – Bake

Preheat the oven to 350°F (175°C).

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for another 10 to 15 minutes until the top becomes lightly golden and bubbly.

Step 6 – Cool Before Serving

Allow the capirotada to rest for 15 to 20 minutes after baking.

Serve warm, at room temperature, or chilled.
