Mississippi Mud Potatoes – Creamy, Cheesy Bacon Potato Casserole

1. Prepare the Ingredients

Preheat your oven to 325°F (163°C).

Peel the potatoes and cut them into evenly sized cubes.

Cook the bacon until crisp, then crumble it. Chop the onion, mince the garlic, and shred the cheddar cheese.

2. Mix Everything Together

Place the diced potatoes in a large mixing bowl.

Add the cheddar cheese, crumbled bacon, onion, and garlic.

Stir in the mayonnaise until the potatoes are evenly coated.

Season lightly with salt and black pepper.

Remember that bacon and cheddar already add plenty of salty flavor, so it's best to start with a small amount of salt.

3. Transfer to the Baking Dish

Lightly grease a 9×13-inch baking dish.

Spread the potato mixture evenly inside.

Cover the dish with aluminum foil to help the potatoes cook through without the top browning too quickly.

4. Bake

Bake for approximately 1 1/2 hours, or until the potatoes are completely tender.

You can gently stir the casserole around halfway through cooking if needed.

If you'd like an extra-cheesy top, sprinkle additional cheddar over the potatoes during the final 10 minutes of baking.

Remove the foil near the end to allow the top and edges to become lightly golden.

5. Rest and Serve

Remove the casserole from the oven and allow it to rest for about 10 minutes.

Finish with chopped green onions, parsley, or additional crispy bacon if desired.

Serve warm.

Tips for the Best Mississippi Mud Potatoes

Cut the Potatoes Evenly

Similar-sized cubes will cook at roughly the same speed.

Shred Your Own Cheese

Freshly shredded cheddar usually melts more smoothly than some pre-shredded varieties.

Don't Add Too Much Salt

Bacon, mayonnaise, and cheddar already provide plenty of flavor. Taste before adding extra seasoning.

Check the Potatoes for Tenderness

Cooking time can vary depending on how large you cut the potatoes. They're ready when a fork easily slides through the center.

Add Extra Cheese at the End

Adding a final layer of cheddar during the last few minutes gives the casserole an irresistible cheesy finish.

Easy Variations

This recipe is simple to customize.

Spicy Mississippi Mud Potatoes: Add diced jalapeños or a pinch of cayenne pepper.

Extra Cheesy: Mix cheddar with Monterey Jack or Pepper Jack.

Add Vegetables: Bell peppers or broccoli can add extra color and texture.

Sour Cream Version: Replace part of the mayonnaise with sour cream for a slightly tangier flavor.

Crunchy Topping: Add breadcrumbs or crushed potato chips during the final few minutes of baking.
